Digestif is a blend of two dark beers produced in July 2022 and February 2023. Spontaneous fermentation took place in old French oak barrels for over three years. The finished blend was dry-hopped with a large dose of whole leaf German and Slovenian hops. The hops were selected for their herbal and peppery character.
