Mixed Ferment Clementine Wild Ale - primary fermentation was achieved with a blend of 3 strains of Brettanomyces bruxellensis that impart a funky and complex array of tropical and dark berry fruit esters. Aged on 10% fresh Spanish clementine juice and zest, with just a touch of Lemone di Sorrento juice and zest to balance the flavour profile.
