2021 Pinot Noir Grapes from Herefordshire, UK Hop Flowers: Sabro, Citra, Mosaic Wine made in London Punchy and refreshing like a hoppy IPA with a lovely acidity. It’s very hazy which contributes to the palate weight and finish. It has aromas of coconut, citrus and tropical fruits as well as a slight saltiness on the tongue. It’s a bit lively so make sure it’s icy cold to avoid it foaming over. Can be drink hazy or clear: leave to stand up for 24+ hours to allow it to settle. The grapes were 100% whole bunch pressed and inoculated with a yeast strain. After its first fermentation in stainless steel tanks, the base wine was dry hopped with 10 g/L of Sabro (50%), Citra (30%) and Mosaic (20%) for 1 week before being bottled for its second fermentation. This wine is undisgorged.
